Book about the "science of Indian cooking", or something more like an engineer's idea of a cookbook. Attempts to give general first principles explanations for a bunch of things; have not yet read enough to see whether he's approached anything like "exhaustive", but I expect it will be more in the lines of, well, a cookbook.

The intro has a lovely discussion of the traditional learning process of an Indian kitchen and how its explanations are often post-hoc with characteristic post-hoc inaccuracies. Judgmental tone and march-of-progress drumbeat notwithstanding, it's an accurate claim that makes me think of learning by accretion.
